One morning in 1993, at his railway station restaurant in Kottayam, Biju watched a train pull away before he could hand a traveller his change. He set the money aside — and when word reached him weeks later, he went to great lengths to return every rupee.

That quiet act became national news. At the public felicitation that followed, Biju made himself a promise: people who place this much trust in you deserve the purest food you can serve. Everything we make today flows from that one promise.

It began in the smallest possible way: whole chillies washed, UV-dried, and ground fresh, sold in small bottles weighed live at the restaurant counter. Customers tasted the difference immediately — and their word-of-mouth filled a 200 sq ft stall next door. Machine by machine, product by product, that stall grew into Biju's Green Leaf.
